Carlson Gracie Plant City offers Brazilian Jiu-Jitsu classes, including a Kids Class, a Kid's Brazilian Jiu Jitsu Class, and Adult Gi BJJ - All Levels. The program also runs an After School Program that includes a Kid's Brazilian Jiu Jitsu Class. The first class is free, and the kids class is for all skill levels from beginner to advanced.

The Kids Class is for ages 3 to 12 years old. The weekly class schedule includes: Monday and Wednesday Kids 3 to 5 years old from 4:30 pm to 5:00 pm; Monday through Thursday Kids 6 to 9 years old from 5:00 pm to 5:45 pm; Monday through Thursday Kids 10 to 14 years old from 5:45 pm to 6:30 pm; Monday through Thursday Adult Gi BJJ - All Levels from 12:00 pm to 1:00 pm; and Monday and Wednesday Adult Gi BJJ - All Levels from 6:30 pm to 7:30 pm. Program hours are Monday through Friday from 3:00 pm to 8:30 pm and Sunday from 12:00 pm to 3:00 pm.
The leadership team includes Samuel Kimmel, Cory West (Manager), and Samuka Bjj. The After School Program includes school pick up from Knights, Bailey, Walden Lake, Springhead, Burney, Jackson, and Independence Academy elementary schools, along with homework and reading time and a healthy snack. The mission statement for Carlson Gracie Plant City states that its number one focus is the participant, that they train to be the best in any situation, and that Brazilian Jiu-Jitsu is described as a martial art that teaches self-discipline, respect, honor, and how to be humble, with an emphasis on lessons learned and continual improvements rather than wins or losses.
