The Gourmandise School Youth Cooking Camps and Classes include Teen Camp: The Art of Baking and Teen Camp: Cooking Fundamentals. In these camps, students take part in baking and cake decorating, make drop and bar cookies such as butterscotch blondies, classic chocolate chip cookies, and oatmeal raisin cookies, and bake devil's food and confetti cupcakes with American and Swiss meringue buttercreams while practicing cutting cake layers, crumb coating, and piping cakes. Students also make homemade Oreos with vanilla buttercream, madeleines, coconut macaroons, all-butter pie dough, and crimped and lattice-topped blueberry pies, and they work in pairs throughout the camps.

• Schedule: Week-long camps (Monday to Friday) with Teen Camp: The Art of Baking from 10:30am–1:30pm PST and Teen Camp: Cooking Fundamentals from 2:00pm–5:00pm PST

In Teen Camp: Cooking Fundamentals, students practice knife skills and make dishes such as creamy potato leek soup, fatoosh salad with toasted pita, roast chicken with pan sauce and roasted potatoes, bechamel for mac n cheese, romesco, and creme anglaise. The camp includes egg technique with fried, poached, and scrambled eggs, French style omelettes, eggs Benedict with hollandaise sauce, and chocolate souffle, as well as chicken technique with braised chicken thighs with mushrooms and shallots, lemongrass chicken paillard with ginger kale salad, hot honey chicken wings with homemade ranch, and a full chicken breakdown and debone demonstrated. Beef technique includes making sweet and spicy skirt steak, classic meatballs with tomato sauce, fennel apple salad, and horseradish mashed potatoes. Students should be picked up and dropped off by parent(s) or a legal guardian, and for Teen Camp: The Art of Baking, students are asked to bring a large, open box to carry warm treats home. The camps bake with quality whole wheat flours and fresh fruits from the Santa Monica Farmers’ Market. The leadership team includes Pastry Chef Robyn Collins and Chef John Pitblado.
