Spitfire Farm’s mission is to provide the South Florida equestrian community with a safe and nurturing environment for both horse and rider by offering a premier boarding facility with a prize-winning training program. The founders and owners are Paul Cook and Ejola Cook, and it is a family business with their four children working regularly at the farm. Trainers include January Magee, who has been a trainer for over 30 years; Lorraine Royal, who focuses on the junior show team and young riders ages 6 and up; Lauren Soohoo, who focuses on young adult students and older; and Catina Farah. January Magee has taken riders from beginners to showing at the highest level in the country and has experience importing horses internationally and showing at highly rated shows. Lorraine Royal has been training for over a decade. Lauren Soohoo has over 20 years of horse experience in Hunter Jumpers and Dressage, over 10 years of teaching, and has completed and placed at Zone II Hunter Finals, Marshall and Sterling Finals, and IHSA Regionals.

Spitfire Farm is a full-service boarding facility with onsite managers 24 hours a day and offers various levels of services from standard full board to grooming, clipping, exercising, and supervised medical care. The facility will have two full rings, one focused on jumping and one for flat and western, plenty of green grass turnout, two large barns, and an airconditioned club house with a full shower. Turnouts are being reconfigured and seeded to ensure every horse has an opportunity to be outside and on grass. The farm welcomes all disciplines and is one of the only farms in Coconut Creek where riders can ride into Trade Winds Park and access miles of equestrian trails. It is within easy access of Sawgrass, the turnpike, and I-95, and within 45 minutes from Wellington and the Winter Equestrian Festival.

Ejola Cook has been recognized as a leader in the Independent Used Car Market and was named a Lawyer of Distinction in 2020, a Top-Rated Lawyer in 2021, and one of 2021 power lawyers in the New York Times. She is active in her community as the current president of the Plantation Acres Saddle Club and a Sunday school teacher at Bethesda by the Sea. Paul Cook is trained as a radio broadcaster, spent over 11 years in the radio industry including as an on-air personality on 99.9 Kiss Country, and began his military career in 2009 as an aircraft structural mechanic working on F-16 fighter jets as a certified A&P mechanic; he later transferred to the Public Affairs department with a focus on mass communication and continues as an Active Reservist stationed at the Homestead Air Force Base.
