Centralia College Continuing Education Cooking Workshops offers focused online classes in North Indian Cooking, Moroccan Cuisine, Japanese Udon Noodles from Scratch, and Chinese Cooking. In these workshops, participants make dishes such as chicken tikka masala, aloo masala, spiced rice, tomato raita, Moroccan chicken tagine, couscous, salad, udon noodle dough from scratch using a knife-cut technique, udon noodle soup, abura udon with chicken, mapo tofu (pork and tofu), stir-fried assorted vegetables, eggplant in garlic sauce, cucumber salad, and dishes served with steamed white rice. Each class requires reliable access to a computer or laptop with internet access to complete online homework and review online materials.

Instructor Ploy Khunisorn leads the workshops. The North Indian Cooking class teaches how to layer flavors using different spices and features bold and rich flavors from ghee, cream, and spices. The Moroccan Cuisine class is described as an online interactive class and talks about Moroccan spices, including Ras el Hanout, and varieties of other types of tagine dishes, and it notes that a tagine pot is not required to make tagine. The Japanese Udon Noodles from Scratch class starts with making the noodle dough from scratch, uses a knife-cut technique, and talks about types of flour and techniques that make each type of noodles different, with options for vegetarian and vegan or any types of meat. The Chinese Cooking class is described as an online interactive class, notes that Chinese cooking is known for a quick and healthy meal, and explains that once the techniques are learned, it is possible to make a quick and simple meal at home on a regular basis, with the option to substitute pork with chicken or beef or make it vegan.

For online and Zoom classes, withdrawal and refund requests must be made by phone or email 24 hours or more before the start of the class to receive a 100 percent refund, and refunds will not be authorized after the Zoom link has been sent for security of the virtual classroom. For in-person classes, withdrawal and refund requests must be made by phone or email prior to the start of the class to receive a 100 percent refund, and no refunds are made after that time, with unexplained absences without prior communication to the instructor resulting in immediate withdrawal without a refund. For all classes, full refunds are made if Centralia College cancels the class. The Continuing Education office emails Zoom links 24 hours before the class starts, and if the Zoom link has not been received and the online class is fewer than 24 hours away, the participant must contact the Continuing Education office at 360-623-8940 or a refund will not be provided.
