About

From Scratch Bake Sessions focuses on learning to bake through completely hands-on cooking and baking activities. Kids measure and mix ingredients, work with yeast, cut butter into pastry, and mix, knead, and shape dough, including making French pastries like cream puffs or macarons. All ingredients, supplies, and recipes are included, and campers taste their creations and bring home plenty to share while collaborating in pairs and also working individually with real kitchen tools.

• Ages: 8–15 years old
• Schedule: Camp runs Monday through Thursday with morning sessions from 9am–Noon and afternoon sessions from 1pm–4pm; weekly cooking classes are offered on Fridays at 3:30pm and Mondays at 3:30pm; homeschool cooking classes meet on Wednesdays from 2pm–3:30pm and Thursdays from 10am–11:30am

From Scratch Bake Sessions are led by Armena “Chef Arm” Jehanian, who graduated from Los Angeles’ New School of Cooking and holds a Bachelor of Fine Arts degree in Graphic Design from The University of the Arts. Before teaching these sessions, she worked at several design studios and later as a creative director at Mattel on the Barbie and Hot Wheels brands. The program offers small groups of just six campers per session, with an optional Junior Chef camper spot limited to one per session; Junior Chef campers receive an additional 30 minutes of individual camp time each day with Chef Arm focused on culinary prep.

The mission of From Scratch Bake Sessions is to offer a hands-on approach that makes learning to bake entertaining, inspiring, and yummy, with kids learning real kitchen skills through hands-on cooking and baking fun. The program states that students build confidence while practicing kitchen safety, preparation, teamwork, and proper kitchen etiquette, and that kids learn kitchen safety, build math and science skills, improve overall concentration, and discover the history behind what they are making. From Scratch Bakers also states a series of beliefs, including that dessert comes first, sprinkles improve everything, sweets are for sharing, butter makes it better, baking is fun science, measuring improves math, giggles are great, kitchen skills last a lifetime, memories count more than calories, fresh is fab, every kid is a smart cookie, and that kids are never too young or old to learn something new.

The program notes that it is allergy-friendly, does not cook with nuts, and does its best to accommodate allergies and food restrictions. It also states that all instruction is hands-on, with campers collaborating in pairs and working individually. Chef Arm’s Lemon Cloud Cupcake received positive feedback from Iron Chef Michael Symon on ABC’s The Chew, and she mentored and coached a 13-year-old who was later crowned a Chopped Junior Champion.

One parent testimonial describes how Chef Armena created a six-session bake syllabus for a 13-year-old student named Sophie, who enjoyed the weekly sessions and viewed Armena as a role model and mentor. According to this parent, six months after the sessions, Sophie became a Chopped Junior Champion and the parent credits Chef Armena’s teaching as essential to that result.
