Cookshop was founded by Meredith Mortensen. Meredith has been the pastry chef at Carafe Bistro and a Baking and Pastry Instructor at the International Culinary School at the Art Institute of Portland. Before moving to Portland, she worked at No. 9 Park and Flour Bakery in Boston, The Home Ranch in Colorado, and Daniel Boulud Brasserie in Las Vegas. Meredith holds a BA in International Political Economy from The Colorado College and a Patisserie Diploma from Le Cordon Bleu, London, and she has called Portland home for the past 19 years.
Cookshop states that it is an encouraging and supporting place for young cooks and a spot where adults gather around the kitchen island to learn to make authentic food and foster friendships. Classes are led by some of the region's most celebrated chefs and food and beverage artisans, and the space includes a thoughtfully curated selection of culinary items in its retail shop. Cookshop partners with several local farms and purveyors to provide local, seasonal ingredients for classes and hosts the Fox & Bear Urban Farm CSA each summer, as well as pickups for Dana Carey Bakes pastry subscription and the Croft Farm tomato subscription.
