Cookshop also offers class options for after school and weekend baking.

Cookshop is founded by Meredith Mortensen. Meredith Mortensen trained at Le Cordon Bleu in London, England, worked as a pastry chef for 9 years in London and across the US, taught at the International Culinary School at the Art Institute of Portland as a Pastry Chef Instructor teaching all levels of baking and pastry, taught the Kid’s Cook in the Market series at the Portland Farmer’s Market, and developed a cooking curriculum for a day camp in Chicago. She holds a BA in International Political Economy from The Colorado College and a Patisserie Diploma from Le Cordon Bleu, London.

Cookshop states that it is an encouraging and supporting place for young cooks and a spot where adults gather around the kitchen island to learn to make authentic food and foster friendships. Cookshop hosts various events such as monthly Slow Food PDX Conviviums, Plates for the People, and community run/walk/movement mornings. It partners with several local farms and purveyors to provide local, seasonal ingredients, and hosts the Fox & Bear Urban Farm CSA each summer, as well as pick ups for Dana Carey Bakes pastry subscription and the Croft Farm tomato subscription.
